* 2-1/2 lb. beef for stew, cut into 1-in. pieces
* 2 c. water
* 1 pkg. (.9 to 1.68 oz.) dry vegetable soup mix
* 1 lb. asparagus, cut into 2-in. pieces
* 8 oz. mushrooms, cut in half
* 2 Tbsp. cornstarch dissolved in 1/4 c. water
* salt and pepper
1. Combine beef, water and soup mix in stockpot; bring to a boil. Reduce heat; cover tightly and simmer 1-3/4 to 2-1/4 hrs. or until beef is fork-tender.
2. Add asparagus and mushrooms to stockpot; bring to a boil. Reduce heat to medium and cook, uncovered, 4-5 min. or until asparagus is crisp-tender, stirring occasionally. Stir in cornstarch mixture; bring to a boil. Cook 1 min. stirring occasionally. Season with salt and pepper, as desired.
