Quick Pork Mole

What you need:
* PAM® Original No-Stick Cooking Spray
* 1-1/4 lb. pork tenderloin, cut into bite-size pieces
* 1/2 c. chopped onion
* 2 tsp. chili powder
* 1 tsp. ground cumin
* 1/2 tsp. ground cinnamon
* 2 cans (10-oz. ea.) RO*TEL® Original Diced Tomatoes & Green Chiles, undrained
* 1/4 c. semisweet chocolate morsels
What to do:
1. Spray large skillet with PAM® cooking spray; heat over medium-high heat. Add pork; cook 5 min. or until pork is done, stirring occasionally. Remove from skillet; set aside. Add onion to skillet; cook 3 min. or until tender, stirring occasionally. Add chili powder, cumin and cinnamon; continue cooking about 1 min. or until spices are fragrant, stirring frequently.
2. Add undrained RO*TEL® tomatoes and morsels; bring mixture to a boil, stirring occasionally. Reduce heat to medium-low; cover and simmer 8 min. Return drained meat to RO*TEL® tomato mixture; heat until hot.

Cook's Tips: Serve this mole with warm tortillas or over rice. For a milder flavor, use RO*TEL® Mild Diced Tomatoes & Green Chiles.
