* 8 oz. mixed crabmeat
* half an onion, grated
* 5 oz. white sauce
* 1 tsp. tabasco sauce
* 1 hard boiled egg, chopped
* 2 Tbsp. plain yogurt
* salt and black pepper
* 1-2 Tbsp. Parmesan cheese
* paprika
* lime wedges, to garnish
1. Make up white sauce using a packet mix (or place 5 oz. milk, 1 Tbsp. butter or margarine and 1 Tbsp. flour together in pan and cook gently, stirring continuously until thickened).
2. Stir crabmeat, onion, tabasco and egg into the sauce. Simmer for 3-4 min., then remove from heat and stir in yogurt and seasoning.
3. Spoon into individual dishes, and sprinkle with parmesan and a little paprika. Place under a low-medium broiler and cook until golden brown. Garnish and serve with a tossed green salad.
* Try substituting 8 oz. of cooked flaked smoked fish such as cod or haddock for the crabmeat.
