* 3 eggs
* 4 Tbsp. prepared mashed IdahoŽ potatoes
* 1 Tbsp. (heaping) low-fat sour cream
* 1 Tbsp. thinly sliced green onion
* 1/4 c. grated 2% milk cheddar cheese
1. Make omelet in the standard method, but do not fold.
2. When the omelet is cooked, spread mashed potatoes on top. Put sour cream on top of potatoes. Add the green onion and grated cheese.
3. Put briefly under a warmer or in the oven to melt cheese.
4. Serve with a fruit garnish.
