* 4 U.S. Farm-Raised Catfish fillets
* 2 tsp. paprika
* 2 tsp. dried oregano
* 2 tsp. dried thyme leaves
* 1/2 tsp. onion powder
* 1/2 tsp. garlic powder
* 1/2 tsp. salt
* 1/4 tsp. black pepper
* pinch of cayenne pepper
* 2 tsp. olive oil
* 1 tsp. butter
1. In a small bowl, stir spices together until well mixed. Sprinkle both sides of fish with spice mixture, patting onto fillets. There may be a bit of spice mixture left over.
2. Heat oil with butter, in a large non-stick frying pan, over medium-high heat. When it begins to bubble, add fillets. Cook, until fish flakes, about 4 min. per side, and serve.
