Pork and Peanut Ragu

+ 1/2 lb. ground pork
+ 1/2 c. roasted peanuts, salted + 2 Tbsp. peanut oil + 1 medium shallot, minced + 1 clove garlic, minced + 1 Tbsp. white miso paste + 1 1/2 tsp. sugar + 1 tsp. tamarind concentrate, OR 1/2 tsp. tamarind, paste + 1 lime, juiced + cilantro leaves, chopped for garnish What to do:
1. Chop peanuts until pretty fine with some larger bits; set aside. Heat oil in medium sauté pan or skillet over medium heat. Add in shallot and garlic and cook without browning for 2 minutes, stirring occasionally. Add in pork and cook until lightly brown.
2. Stir in all other ingredients, aside from peanuts and cilantro, along with 1/2 cup water. Simmer, uncovered, over medium heat for 4-5 minutes or until becomes thickened.
