Candied Red Grapefruit Rind

+ 1 c. water
+ 2 c. honey + peel from 1 grapefruit (red if possible), cut into 1/4 in. thick pieces + 1 c. granulated sugar What to do:
1. Combine water and honey in a saucepan. Simmer over medium
heat. Add grapefruit pieces, simmer for 40 min. Remove from heat and let grapefruit sit in honey syrup for at least 1 hr. or overnight. Remove strips from syrup and roll in sugar. Store in an airtight container for 1 week. * Sweet, tart and beautiful. These candy-like gems balance the creaminess of Mascarpone and Ricotta. |
