Coconut Lime Fillets

+ 1 egg
+ 1/3 c. coconut milk + 3/4 c. fine breadcrumbs + 1/2 c. flaked unsweetened coconut + 1 tsp. lime zest, minced + 4 whitefish fillets (red snapper, perch, king fish, tilapia, branzino, etc.) + salt and ground pepper to taste + 6 Tbsp. reduced calorie mayonnaise + 1 1/2 Tbsp. Dijon mustard + 3 Tbsp. fresh lime juice What to do:
1. Combine egg and milk in a shallow dish. Set aside.
2. Combine breadcrumbs, coconut and lime zest in a separate shallow dish and set aside. 3. Lightly season fillets with salt and pepper, dip into egg mixture, then dredge in coconut mixture. Arrange fillets on a lightly greased parchment-lined sheet pan. 4. Bake at 450°F for 15 min. until fish flakes easily. 5. Serve each fillet with approximately 1 1/2 Tbsp. of Mustard Lime Sauce.
